Sage

Botanical name: salvia officinalis

Family: lamiaceae (mint).

Taste: has an astringent taste which is like biting into an unripe banana or strong black tea.

Herb uses: sore throat, excessive sweating, infections, digestion, hot flashes, toothache, sore muscles, high cholesterol. Many people use it in tea, tooth powder, facial steam, essential oil.

Honey Syrup Recipe

1 cup raw honey. 1 cup water. Combine the honey and water in a small saucepan over medium heat and stir until the honey dissolves. Remove from the heat. Let cool to room temperature. Transfer to a clean jar, cover, and keep refrigerated for up to 2 weeks. 

BBB Recipe

1/3 ounce fresh squeezed lemon juice. 1/4 ounce honey syrup. 3-4 blackberries. 2 or 3 fresh sage leaves, plus 1 for garnish. 

Combine the lemon, honey, blackberries, and two or three sage leaves in a glass and muddle well. Transfer the pureed mixture, double strain (optional) into a champagne flute and top with sparkling wine. Garnish the flute with sage leaf. Make sure sparkling champagne is cold. 

Mock-tail Recipe: replace sparkling champagne with your favorite sparkling water but avoid citrus flavors.
